OLIVE OIL: SO LITTLE... BUT SO MUCH!

Olive oil is naturally very rich in omega-9 fatty acids. The first simple observation is that these wonderful omega-9s serve to counterbalance excess saturated fatty acids. In excess, these saturated fatty acids found in charcuterie, meat, cheese and processed foods also have a pro-inflammatory effect.
