The main difference between your gels and your purées is the carbohydrate content. Your purées, with no added sugar, contain an average of 15g of carbohydrates, whereas your gels contain 30g thanks to the natural sugars in the fruit and the added agave syrup.
The texture of your purees is more satiating because they're a little thicker, and the recipes are either savoury or sweet, so they're better suited to medium-intensity, long-duration efforts. Your gels, which are more concentrated, provide a real boost, are better suited to intense efforts and can be consumed either pure or diluted in a 500ml flask.
